‘Double Temptation’ in a Summerhouse


 
Indian-born Sanjiv Suri opened a restaurant in the centre of Prague in 1991, combining gastronomy with an interesting interior. He takes the view that customers enjoy being surprised and like to seek out unusual and interesting surroundings. The V Zátisí Restaurant is divided into several separate areas, one of which has recently been redesigned. The creator of the new look is Rony Plesl, who has a passion for glass objects and their interplay with light. He has had his glass artefacts installed in the large windows which overlook the street. In white light, these plantlike objects create an atmosphere reminiscent of the jungle. The lighting also plays an important part in making the restaurant interior cosy and intimate. The result is evocative of a British summerhouse and suggests an aristocratic environment. The restaurant has created the gastronomic concept of ‘double temptation’, which always presents one basic raw ingredient, such as fish or meat, with two interesting and often contrasting flavours. Most frequently it presents traditional Czech recipes with a modern twist. The menu combines foreign and domestic cookery in bold and daring ways. The restaurant is open all week for lunch from noon to 3 pm and for dinner from 5.30 to 11 pm. The seating capacity is between 85 and 120. It serves 60-200 customers every day. The average spend on lunch is CZK1,100 and on dinner CZK 1,450. The ratio of food to beverage sales is 65:35.
