A Restaurant, not a salad bar

La Feuille in La Rochelle (open midday only except Friday and Saturday) is a restaurant, not a salad bar, because the salads on large plates are served at the table. Operators M. & Mme Faure attach great importance to presentation: half of the plate is covered with two-tone loose lettuce (‘feuille de chêne’) and small slices of tomato with the toppings on the other side. Thus, guests can mix the components as required – or not, whatever they prefer. The assortment of twelve salads is the same in both summer and winter and ranges from ‘Nordic Salad’ with smoked salmon, tarama toast and surimi, via ‘Lyon salad’ with sausage, bacon and chicken liver, to ‘Raclette Salad’ with mortadella, Serrano ham, potatoes and raclette cheese. Plus salads with warm toppings, e.g., baked camembert or grilled slices of chicken. The prices? €9 (3 salads), €12 (6) or €15 (3). In addition to leaf salad and tomatoes, around 30 different ingredients are used. The fresh produce comes primarily from regional producers, especially in the summer. A clever extra in the concept is a small electric sauce mixer on each table that guests can use to whisk their dressings – depending on the individual’s taste, olive oil with balsamic vinegar, lemon or shallots and chives.
