Britain's Take on the Pizza


 
Union Jacks is the highly-anticipated new concept from high-profile chef JamieOliver, which offers wood-fired flatbreads featuring Great British flavours. The newconcept is overseen by Oliver and award-winning US chef Chris Bianco. Bianco operatesPizzeria Bianco in Phoenix, Arizona, and is renowned in the US for his woodfiredpizzas. Union Jacks places significant emphasis on locally-sourced produceand its offer has been described as a British take on the pizza.
 
The first site underthe Union Jacks name opened in November in the Central St Giles Piazza developmentin London’s West End. A further site has already been secured for the concept,which combines Bianco’s technical expertise and artisan dough-making withOliver’s love of top-quality ingredients, in Chiswick. The link up with Bianco mirrorsthat of Oliver’s with Adam Perry Lang for his barbecue concept, Barbecoa, whichlaunched at One New Change near St Paul’s at the end of 2010. It is thought thatJamie Bianco Ltd, the company set up to oversee the new brand, is already lookingat a number of other sites to rollout the format, with Oliver hoping to recreate thesuccess of his 25-strong Jamie’s Italian chain.
