EverGreen
in Athens can be described best as a cross-over concept between a fast casual bakery-café and a Mediterranean casual restaurant.
 
It was opened in April 2006 and provides seating for 200 guests. Offering full service, it is the only contemporary casual restaurant in Athens which is open 24/7. The menu focuses on Mediterranean based sandwiches with artisan breads (10 different types) and quality Greek and Italian ingredients, open-faced ciabattas, innovative salads and crepes, seasonal hot and cold pastas, soups and a long list of coffee beverages as well as 100% fresh juices and fruit smoothies.
 
Everything is prepared in front of the customer as a ‘theatre for the guest’. This promise of quality attracts between 900-1,100 customers daily to the Athens shop.
 
The average bill amounts to €6 with a F:B ratio of 65:35. Take-away business accounts for approx. 30% of sales.
 
There are two smaller, bakery-café style outlets in Corfu. Owner Meneleas Koulouris, a young biologist, claims EverGreen to be the “one and only ambassador of the third wave of espresso in the Balkans”. A unique espresso blend is roasted in-house with rare Arabica beans from five different origins. Cappuccinos are decorated with award-winning latte art.
