Culinary Way of Living

With his dishes, Bo Bech, one of Denmark's young, pioneering chefs aims to "kick start guests' minds" at his restaurant, Paustian. Combined with classic French cuisine, his molecular dishes have not only created a sensation among Copenhagen's gourmets but he was also awarded a Michelin star in the spring - and this is all the more surprising because his restaurant is located in a furniture store. Paustian stands for unpretentious, modern furnishings of high aesthetic quality. Accordingly, Bech sees his concept as a ‘Way of life'. Besides an exciting à la-carte menu (main courses from DKK290 to 340), the restaurant serves lunch (DKK300) and three (or more) course table d'hôte dinners - the classic Brillat-Savarin surprise meal (DKK750 including wine), the experimental Alchemist (pure ingredients with a twist, DKK600) and the vegetarian Chlorofill DKK750. To accompany this there is an impressive wine menu with a selection of exquisite wines to suit every pocket. The location right on the waterfront of upcoming Nordhavn has room for 90 seated guests and about 200 for a reception. The architect of the furniture store was none other than Jørn Utzon who also designed Sydney Opera House. Opening hours: Mon.-Sat. 12-15 and 17.30-24 hrs.
