East Mediterranean Dip Gets Star Treatment


 
Hummus Bros
, which started a 30 seat branch in London’s Soho two years agoand recently opened a larger, second unit in the Holborn district, offers a keenlypriced, all-day menu of interesting take-away and eat-in dishes based entirely onfreshly-made hummus plus warm, fresh pita bread. While hummus appears widelyon the starter and meze menus of London’s many Greek, Turkish, Cypriot andLebanese restaurants, as well as in supermarket chiller cabinets, it hardly ever receivesstar treatment.
 
Christian Mouysset and Ronen Givon, who dreamed up theHB idea while still college students, have rectified that in distinctively styled, brightly-coloured premises which attract a young, health-conscious, budget-mindedcrowd. The hummus is served plain or with a small range of unusual toppings suchas salad, tomatoes, chunky beef stew and sauteed chicken.
 
Prices range fromGBP2.50-5.00, plus extra revenue from milky desserts, fresh juices and otherdrinks. Mouyyset reckons to serve about 300 people daily at each branch, botheat-in via the refectory style bench seating and packaged simply for takeaway. Twoother notable features of the HB concept: dishes only need very modest kitchenfacilities and the menu is versatile enough for grab-and-go lunches and moreleisurely evening dining.
