Energy Kitchen - Swiss Style

For almost a year now, the Energy Kitchen at Loeb, a traditional department store in Berne, has given new impetus to the catering scene with a trio of services - a restaurant, a coffee bar on the ground floor and the staff canteen. Husband and wife team Christian and Petra Gierstorfer already run five fast-casual-formula, Energy Kitchen outlets in England. Entering the Swiss market was a major expansion of the concept. The restaurant (90 covers) is special insofar as it is a hybrid of counter service and self-service. Individual portions of the dishes of the day are laid out on the buffet in china bowls for a fixed price (main meals CHF7.80 each, side dishes CHF3.90). For those guests, who prefer to determine the size of their portion themselves, a colourful selection of prepared salads and offerings are available, presented in large, old-fashioned-looking pots.The counter has a built-in display offering a wide selection of freshly mixed thirst-quenching juices and smoothies. Most of the items on the menu in the staff canteen are identical to those in the public restaurant. A share of the food produced in the kitchen goes to the Energy-Kitchen coffee bar on the ground floor (60 sq m), where the product range is definitely not restricted to the American bakery fare usually found in coffee shops. In the evening, state-of-the-art lighting technology creates the perfect lounge atmosphere for an aperitif.
