The entrance to Hakisushi restaurants has a spacey look about it – the walls, which curve outwards like a spaceship, provide shelves to the left and right for the takeaway offers provided by the fast casual Sushi bar which was launched in 2005. Further inside you’ll find the restaurant, consisting of a small eat-in area with seating for up to 30 guests, a bar and show kitchen, where centrally prepared ingredients are ‘interactively’ transformed into the chosen dish. The menu at all three self-managed locations currently available in Lisbon goes with the mix of Japanese and Mediterranean dishes set out on 20 different sushi menus, Mediterranean salads and soups and desserts of both provenances (for example chocolate sushi for €3). Bestsellers include: Haki soups (€1.90), Summer Delight (€4) and Tutti Fish (€6), with the average bill coming in at €7. In addition to the restaurants, the company also supplies large supermarket chains, businesses and events from its central kitchen. Around 10,000 sushi boxes leave its production platform each month. Annual turnover from catering plus retail sales are put at €1 m. Hakisushi is planning to open three more Lisbon locations in the near future. And the master franchisee for the Middle East is looking to increase his six operations to 30 by 2011.
