Letting Guests Do the Cooking

Do-it-yourself hit UK hospitality this year with Recipease (picture), a hybrid retailing and teaching concept from celebrity chef Jamie Oliver, so far with two units in London and Brighton. While primarily a shop selling cookware, utensils and ingredients, it also acts a community hub and helps guests make their own bespoke combinations of ingredients on the premises - helped by trained chefs - with the result cooked at home. Charge for a pizza is £5. Cookie, which opened in Glasgow in October 2009 was also conceived as a community resource with restaurant, deli, art gallery  and shop plus ‘cooking club' inspired by Koch Klub Kuhn in Vienna. Members can use the open plan professional kitchen to cook meals for themselves or for community or school groups. The focus is on fresh, seasonal produce, available at discount to members. A communal oven is provided on a barter basis for baking bread and cakes.
