Madeleine’s Culinary Theatre and Lab


 
You do not make a reservation at Madeleine’s – you buy a ticket to the show. The basic idea is that the food is orchestrated so that you get a multi-sensory food experience. While the aperitif is served you take the starter from a vending machine. In the dining room films made specially to emphasise aspects of the food servedare projected on the walls. Music composed to complement the food is played and aromas are diffused into the room. The dinner has 8-10 courses and the price is€160 including a wine menu. The theatre/restaurant has 50 seats and the show runs on Thursdays, Fridays and Saturdays at 6 and 9 pm. But the (movie) theatre is only one half of the business. The other half is the Laboratory. It provides the right facilities for product development in the food and beverage industry. Specialists in food, sensors, sociology and innovation work here from Monday to Wednesday. This way the kitchen is working 6 days a week and you get the cross-fertilisation of ideas between the restaurant and the lab. Madeleine’s opened in June 2006 under the management of Mette Sia Martinussen, a chef very well known in Denmark and Nikolaj Danielsen, a film production designer. The laboratory is managed by AnnaBentzen.
