New Face, Old Values

First opened in 1988 as a Cypriot Taverna, The Almond Tree in Paphos has undergone a complete metamorphosis to become the stylish Miami-inspired fusion formula of today. Owner and head chef Andreas Michaelides bought the restaur ant from his parents in 2000 and set to work to bring home many of the creative culinary skills he had learned while working in the US and the Caribbean. A complete refit, including new kitchens and interior designed dining areas, followed. In 2005, a renovated The Almond Tree opened offering an ambitious menu and stylish interiors, blending Mediterranean favourites with Asian style and taste. Each dish has been crafted by Andreas, who has taken simple dishes and turned them on their head. The Almond Tree’s signature dish is Pork Chops stuffed with proscutio ham, spinach and mozzarella. The restaurant opens for dinner and operates with a small kitchen brigade of only three – with the chefs working afternoons to prep and then returning in the evening for service. Using only the freshest ingredients, the kitchen produces its own infused oils, curry sauces and other staple ingredients, while the restaurant boasts its own small herb garden. The Allmond Tree offers 90 seats and turns up to 60 covers a day. The average cheque per person is €35.
