Out of Grandmother’s kitchen


 
The aim of Bakaliko all the best is to educate its customers about traditional Greek products and cuisine. They are a young chain of grocery shops, where one can buy exclusive Greek food and beverages (i.e. dairy, sauces, marmalades, cookies, hams, cheese, fish, rice, munchies, wines, liqueurs, spirits) and at the same time tastetraditional home-made, lovingly prepared dishes. Maria Cousta, a single mother of two, founded the mother company Solus Creas (Create Alone) in 2003.
 
Its main activity is the sale of food, including delivery, catering and corporate gifts. The doors of the first selling outlet were opened in Glyfada (Athens) in March 2004, in 2006 two new shops opened in the Athens suburb of Kifissia and in the seaside resort of Porto Heli. Guests (from 20 at one sitting in Porto Heli to 50 in Kifissia and Glyfada, more in the summer) may relax in a very cosy yet modern environment and enjoy food that seems to have come out of their grandmother’s kitchen (traditional Mediterranean recipes with a twist) and purchase the ingredients directly from the shop, since the menu is designed entirely from products sold at Bakaliko.
 
The staff teach customers about inspirational cooking ideas with which to pamper their loved ones at home. “Our clientele includes families with children as well as businessmen seeking somewhere for an informal corporate gathering and young people who wish to try something less quick and plastic than the fast-food restaurants,” explains Maria Cousta. By 2008 she plans to spread the concept across Europe, starting in London.
