Fearless yet Respectful

Despite the rediscovered love of traditional cuisine and regional dishes a change of image is essential for both domestic and ethnic restaurants. Folklore? No way! However, Italy’s Costa Group is always a rich source of visual examples showing ways in which tradition can be oriented towards the future by a fearless yet respectful blend of references to the past and modern ideas. Some examples in Europe. www.costagroup.net

France. Last September, Nicolas Le Bec, the famous French 2-star Michelin chef, opened an extraordinary establishment at Quai Rambaud in the centre of Lyon. A blend of foodservice and retail covering some 2,000 sq m, Rue Le Bec brings together the various trades associated with fine dining. The idea behind the c4-m project is to combine best quality produce and food at reasonable prices in a modern, casual atmosphere. At Rue Le Bec, you will find a bakery (with its own laboratory!) right at the entrance, a florist’s, a greengrocer’s, a butcher’s, a dairy, a café, a wine bar and a restaurant with seating for 200 guests, plus another 100 on the terrace.
